This denotes the use of 0.5% carbon for outstanding edge retention and 15% chrome for high corrosion resistance. Molybdenum and vanadium (MoV) also work to further strengthen the blade and improve stain resistance. The collection has an official Rockwell hardness rating (HRC) of 56±2 ensuring durabiity and easy sharpening.Each handle in the Nihon range is crafted from carbonised ash wood, a process in which the wood is baked to remove moisture content resulting in a highly durable, richly toned handle.The ProCook glass and oak knife bock will be a stunning focal point in any kitchen and has been exclusively designed in house. Featuring beautiful solid oak wood and supported by two 8mm tempered glass sides it stands solid and stable.The block can hold up to 6 knives dependant on the blade width, with 2 wide slots allowing for maximum flexibility.
