This denotes the use of 0.5% carbon for outstanding edge retention and 15% chrome for high corrosion resistance. Molybdenum and vanadium (MoV) also work to further strengthen the blade and improve stain resistance. The collection has an official Rockwell hardness rating (HRC) of 56±2 ensuring durabiity and easy sharpening.Each handle in the Nihon range is crafted from carbonised ash wood, a process in which the wood is baked to remove moisture content resulting in a highly durable, richly toned handle.Store your kitchen knives safely and stylishly with our rectangular knife block. Crafted from high quality American oak wood the block has a wipe clean finish and is designed to hold up to nine 90° bolster knives depending on size.The ProCook rectangular knife block is perfect for smaller spaces due to its compact size and features rubber feet to protect your work surfaces. To care for your knife block store in an airy position away from direct sunlight and other heat sources to avoid drying out. Wipe clean with a damp cloth. We recommend oiling regularly to preserve and enrich the wood. Use vegetable, olive, rapeseed or nut oil.
